Antes de la Segunda Guerra Mundial, se pod\u00edan encontrar cientos de peque\u00f1os salones familiares de chile en todo Texas y otros estados de Norte America. Cada establecimiento ten\u00eda su propia receta secreta. Los frijoles se han asociado con el chile desde principios del siglo XX. Hay muchas variaciones de chiles, siendo \u2018chile con carne\u2019 el m\u00e1s popular. Esta receta est\u00e1 basada en esta \u00faltima, sustituyendo la carne con calabaza para convertirlo en una plato vegano estupendo. Usa batata (camote) en lugar de calabaza, pero trata de usar siempre verdura ecol\u00f3gica y fresca.<\/p>\n<p>El a\u00f1o pasado cre\u00e9 esta receta para mi clase de cocina para adultos del \u2018D\u00eda de dos Muertos\u2019. Cuando pregunt\u00e9 a mis alumnos a qu\u00e9 sab\u00eda el plato, uno de ellos dijo: \u201csabe a M\u00e9jico\u201d. \u00bfTe imaginas c\u00f3mo me sent\u00ed? Me encanta cuando recibo este tipo de comentarios. Son s\u00faper importantes y significan mucho para m\u00ed.<\/p>\n<p>Por lo general, sirvo este chile sobre arroz blanco, un poco de guacamole simple al lado y una tortilla de harina o ma\u00edz (que no tiene gluten).<\/p>\n<p>\u00a1Vamos a cocinar!<\/p>\n<p>Ingredientes para 4 a 6 personas<\/p>\n<p>1 calabaza peque\u00f1a (1 kg \/ 2.2 libras aproximadamente)<br \/>\n1 cebolla roja mediana, finamente picada<br \/>\n1 pimiento poblano \/ pimiento verde, picado<br \/>\n1 chile jalape\u00f1o \/ chile fresco finamente picado<br \/>\n2 ajos finamente picados<br \/>\n1 x 400gr \/ 11 oz lata de tomates picados<br \/>\n1 x 400gr \/ 11 oz lata de frijoles pintos<br \/>\n1 taza de caldo de verduras<br \/>\n1 cucharadita de chile en polvo<br \/>\n1 cucharadita de comino molido<br \/>\n1 cucharadita de piment\u00f3n ahumado<br \/>\n1 cucharadita de or\u00e9gano seco<br \/>\n1 hoja de laurel<br \/>\n2 cucharadas de polenta<br \/>\n1 \u2013 2 cucharadas de aceite de oliva<br \/>\nSal y pimienta al gusto<br \/>\nCilantro fresco<\/p>\n<p>\u2022 Corta la calabaza en cubitos<br \/>\n\u2022 Calienta 1 cucharada de aceite en una olla o cacerola grande con base gruesa<br \/>\n\u2022 Saltea la cebolla y el pimiento hasta que la cebolla est\u00e9 trasnl\u00facida, unos 3 minutos aproximadamente.<br \/>\n\u2022 Agrega el ajo y el jalape\u00f1o, o chile, y sofr\u00edelos por otros 2 minutos.<br \/>\n\u2022 Vierte los tomates y remueve hasta que est\u00e9 todo bien mezclado.<br \/>\n\u2022 Agrega las especias, una por vez, mezclando constantemente para distribuir uniformemente los sabores.<br \/>\n\u2022 Mezclar la polenta<br \/>\n\u2022 A\u00f1ade la calabaza, los frijoles, el caldo y el laurel<br \/>\n\u2022 Salpimienta y prueba si tiene suficiente sabor.<br \/>\n\u2022 Reduce el fuego y cocina a fuego lento durante 30 minutos. (a los 15 minutos comprueba si hace falta m\u00e1s caldo)<br \/>\n\u2022 Antes de servir, retira la hoja de laurel y prueba si necesitas a\u00f1adir m\u00e1s sal y \/ o pimienta<br \/>\n\u2022 Sirve el chile con cilantro fresco y un chorrito de aceite de oliva por encima.<\/p>\n<p>Como cualquier estofado, este chile vegano es mejor al d\u00eda siguiente.<\/p>\n<p>Disfruta y deja tus comentarios abajo.
